Last weekend was go time to roll out the Sacramento Co. CCW class, so I spent little time doing anything else. It was a great experience, but didn’t leave a lot of room for other fun things – like the CA State Fair and cooking.
I perceive the fair lost it’s appeal long ago, but I go anyway — just because. I think all the fun diminished after cultural days were done away with in favor of equally celebrating cultures everyday. Now it’s just a muddled mess of gooback celebration. Oh well. I still have funnel cakes, cute women in straw hats, animals, and student art.
Pre-CCW, I would attach my knife and Surefire flashlight to my waist line under a shirt (No clips showing at the pockets). Depending on the time of day, security would vary, but they typically checked my bag and told me to have a nice day. On weekends or after 4PM, it’s practically guaranteed security would start wanding individual patrons. Except this weekend, I avoided those times. So I was naked with the exception of a Preon 2 flashlight and a Swiss Army knife on my keys. I ate only one funnel cake, pumpkin spice caramel apple, and fried peaches. According to a pedometer I “won,” I walked 6835 steps.
For dinner, I wanted to try out a new book I received. I was initially skeptical. C’mon… “eating well?” Eating well has been marketed as, “cut all forms of fat, eat like a bunny with portions of a mouse.” Looking through the book; however, it provided a lot of common foods found in typical grocery stores with ingredient alternatives that don’t make think you, WTF? So far, its’ recipes are well thought-out, simple and quite tasty! It’s apparently a website, too.
One recipe is the Inside-Out Lasagna; a basic lasagna with ricotta cheese, pasta, tomatoes, garlic, and spinach — without the layering.
Add diced onion and garlic to a skillet coated with olive oil and cook until glazed. Add sliced mushrooms and season with salt/pepper as necessary. Add canned, diced tomatoes with Italian herbs and baby spinach — cook until spinach wilts. Prepare pasta (I used whole grain rotini.) Mix the two and add ricotta to individual servings.
I don’t have a photo, but trust that it’s easy enough to try.
This evening, I made the Tortellini Primavera. Too easy.
